Kenya Fisheries Service will assign an inspector to the processor to discuss their intentions to fish and process fish for the export market, and developing the Hazard Analysis and Critical Control Points (HACCP) for food safety, as well as the Sanitary Standard Operating Procedures (SSOP) manuals. The processor will also receive the fish processing facility inspection checklist to facilitate their readiness for inspection.
